Ingredients

  • 1/4 C pesto

  • 2 eggs (from Stick & Feather Farm!)

  • Salt and pepper


  • Pinch of red chili flakes

  • 2 slices of bread (preferably crusty)

  • 2 oz. goat cheese

Preparation

  1. Heat pesto in a meduim frying pay over medium heat.

  2. Once the pesto is warm, spread an even layer in the pan, and then add the eggs.

  3. Season with salt, pepper, and red pepper flakes.

  4. Cook the eggs until the whites set.

  5. While the eggs are cooking, toast the bread.

  6. Spread the goat cheese on the bread, then top with pesto and eggs.

  7. Enjoy, yum!
